The Best & Easiest Mississippi Pot Roast

Ingredients
  

  • Two Tender Chuck Roasts at about 1.5 lbs each.
  • 2-3 packets of Au Jus Gravy Mix.
  • 2 packs or 1 1/2- 2 tbsps of original ranch seasoning.
  • 5-7 Pepperoncini Peppers & a little splash the juice that they come in.
  • 3 tbsp of salted or unsalted butter
  • 1 white or yellow onion
  • Celery
  • 1 bag of Baby carrots
  • 1 bag of baby potatoes
  • 4 cups of beef broth
  • Salt pepper, garlic powder & onion powder to taste. (Measure with your heart)

Method
 

  1. Sear or don’t sear your meat and then add it to the crockpot on the Low setting.
  2. Carefully pour in your beef broth, seasonings, peppers & juice, and butter.
  3. Gently give it a stir to mix up all the seasonings in with the juice.
  4. Cover with the lid and let cook on Low for about 7 hours before adding in baby carrots and baby potatoes.
  5. Cook for another 2-3 hours on low or until the meat falls apart with a fork, and you can easily cut into potatoes and carrots. If they’re still tough, you will need to cook it a little longer or crank the heat up to High to quickly finish cooking the veggies through.
  6. When it’s ready and fork-tender, you can pick out the onion and celery and peppers, or you can leave them in there. I do both, depending on how lazy I’m feeling!
  7. Serve with any side of choice, mashed potatoes, salad, whatever you choose. My favorite side is just some cooked white rice that I cook in chicken broth with a little salted butter so it’s got a delicious flavor, even on its own. Buttered bread is always a main attraction here in the south, with any meal!

Notes

Cook time will also depend on your crockpot, as well as the size of the roast & how many roasts you decide to cook at once. Some crockpots are lightning fast and take a fraction of the time as others do. Mine personally takes about 8 hours to cook two 1.75lb roasts. I'll try and find my crockpot and link it!
